Beyond the plate, an analogue photo-doc project, documents the restaurant and staff at Uudenmaankatu Sushibar+wine in the summer of 2022.

Preparing a single restaurant dish always involves various stages. All of these stages are done by a living human.

With my photos I want to bring to life the multiformity of daily restaurant operations, honour my colleagues by bringing forth their personas, effort and input in the process of preparing the final dish on a plate.
